Today, it's Saturday, the weather is beautiful and both of us have decided to make crème brûlées. We racked our brains to achieve the real texture without eggs and in the end, the result is not too bad! We put maple syrup in it (because maple syrup is delicious) but you can remove this ingredient if you prefer the classic crème brûlée, just with vanilla. Please note that in this recipe, there is no oven cooking: in fact, it's the agar-agar that allows for the perfect texture.

EDIT of October 4, 2019: changes in the recipe, we replaced the silken tofu because we found the texture a bit granular. It's now a kind of set custard.

I had the idea of ​​adding corn to the cream, like in my vegan custard recipe, it gives a beautiful yellow color and a slightly sweet taste.

  • -almond and rice milk 500 (mL)
  • -vanilla 1
  • -maple syrup 2 (tbsp)
  • -agar-agar 5 (g)
  • -cooked corn 150 (g)
  • -cornstarch 15 (g)
  • -light brown sugar 3 (tbsp)

  • Blend the corn with almond and rice milk; it will give the milk a sweet taste and a yellow color. Strain through a sieve to keep only the milk.
  • Split the vanilla bean in half and scrape out the seeds. In a saucepan, bring the milk to a boil with the vanilla seeds and split bean, the starch, maple syrup, and agar-agar.
  • When the mixture thickens, remove it from the heat, take out the vanilla bean and pour it into 3 small ramekins. Place in the fridge for at least 4 hours.
  • Once the creams are well set, sprinkle brown sugar over each cream and use a blowtorch to caramelize the surface. When you achieve a lovely amber color, you can indulge yourself!
