Cinnamon rolls are my absolute favorite pastry on earth; there’s nothing better. My classic recipe has been on my website since 2016, and I’ve never changed it because I find it perfect. I used to make it exactly the same way in the cafés where I worked in the past 😍 But about ten days ago, I started a sourdough starter at home, and the first recipe I decided to test it with was these cinnamon rolls 🥰 I can confirm, it’s very active, and the rolls are so fluffy and soft—it’s even better than using yeast!

I didn’t change my original recipe, except replacing the yeast with the sourdough starter, and I didn’t need to adjust the quantities! I also used water instead of plant-based milk to test, and it turned out perfect too.

The dough
  • -water 300 (mL)
  • -all-purpose flour 500 (g)
  • -sugar 50 (g)
  • -plant-based margarine 75 (g)
The filling
  • -plant-based margarine 60 (g)
  • -Brown sugar 2 (tbsp)
  • -ground cinnamon 1 (tbsp)
The glaze
  • -icing sugar 100 (g)
  • -water 1 (tbsp)

  • In a mixing bowl (or the bowl of your mixer), pour the warm water and the sourdough starter. Whisk together.
  • Add the flour, sugar, and melted margarine, and knead the dough for about 4-5 minutes (or 15 minutes by hand), until it naturally pulls away from the sides. You’ll notice the texture will become smooth and easy to work with.
  • Place the dough at the bottom of your lightly oiled bowl and cover it with a cloth. Let it rest for 5 hours at room temperature.
  • In the meantime, mix all the filling ingredients: the margarine, brown sugar, and cinnamon, to achieve a creamy texture.
  • Punch down the brioche dough to release the air. On your floured surface, roll it out into a large rectangle (I make it about 40x50 cm).
  • Spread the cinnamon filling all over the brioche dough. Then roll it lengthwise to form a log. Cut the log into 7 large sections.
  • In a greased and floured oven-safe dish, place the 7 cinnamon rolls. Then let them rest for another hour.
  • Preheat the oven to 180°C (355°F). Bake the rolls on the lower rack for about 22 minutes!
  • Mix the powdered sugar and water to make a glaze, and drizzle it over the rolls with a spoon! They’re ready.
