I absolutely love tarte tatin, you know, with a scoop of ice cream or some whipped cream... it's so delicious! And I've been meaning to share my recipe with you for years... So here it is, finally! Enjoy now ;)

  • -salted plant-based margarine 150 (g)
for the sweet dough
  • -plant-based margarine 60 (g)
  • -sugar 40 (g)
  • -salt 1 (pinch)
  • -all-purpose flour 200 (g)

  • Peel all the apples. Cut them in half and remove the cores along with the seeds.
  • In a large pot, melt together the sugar and margarine over high heat until you get a caramel! Add the apple halves and let them cook for about 10-15 minutes, stirring occasionally, so they become infused with caramel.
  • Prepare the sweet pastry: mix the flour, sugar, and salt in a mixing bowl. Add the margarine and incorporate it with your little hands. Pour in a bit of water until you get a ball of dough that doesn't crumble. If your dough is a bit sticky, you can add a handful of extra flour.
  • Retrieve the apples from your stewpot and arrange them in your pie dish, making sure they are tightly packed together! This is because they will shrink during cooking ;) Also, pour all the remaining cooking caramel over the apples.
  • Roll out the pie dough and place it on top of the apples. Press the dough around the edges to seal and enclose the apples.
  • Bake for 50 minutes at 180°C (356°F)! Serve hot or warm with a scoop of vanilla ice cream or vegan whipped cream ;)

NotesI use a 24 cm diameter tart dish. I used salted margarine, but you can also use unsalted margarine and add a pinch of sea salt. Deodorized coconut oil would also work, but there's a risk it won't mix well with the caramel during cooking.
