I posted a little suggestion box on my Instagram story the other day, asking for recipe ideas, and someone asked for a tuna and tomato tart. Honestly, I didn’t even know that was a thing, but it definitely intrigued me 😍
To switch things up from the recipes already on my blog, I decided to make a whole wheat pastry dough with flax seeds, but for busy weeknights, a store-bought dough would work perfectly too!
For the filling, I start with some mustard, spread a bit of semolina to prevent the crust from getting soggy after baking, add a chopped shallot, vegan tuna (I love the one from Gusta, made from white beans and soy – there are other options out there, and you can also make something similar at home with mashed white beans, crumbled nori seaweed, lemon juice, and salt), then I add the tomatoes and pour in the quiche mixture!
