Vegan "Meat" and Halloween Squash Pie

Vegan "Meat" and Halloween Squash Pie
For: 4 servingsDifficulty: EasyPreparation: 20 minCooking: 1h15

I think I've never done a Halloween-themed recipe on the blog 😅 Of course, there are tons with autumn flavors for this season, but not for the big night 😭 I'm not really into gory recipes, the whole fake eyeballs at the snack table deal and all that haha... but I like my blog to be comprehensive and have everything you might need, so I thought about creating something thematic yet cute that I would enjoy too!

I had some puff pastry in the freezer, so let's go for a puff pastry pie with squash and "ground meat" made from textured soy protein! To draw the face, I searched "pumpkin Halloween decor" to find some inspiration to recreate on my pastry 😍

  • Peel the onion and the squash, then cut them into small cubes.
  • In a skillet, heat the oil and sauté the onion. After 2-3 minutes, add the squash and sauté until the vegetables are golden.
  • Add the soy protein, soy sauce (or tamari), nutritional yeast, and water. Let it cook for about 20 minutes.
  • When the water has evaporated, season with salt, pepper, and a pinch of cinnamon. Pour in the soy cream. Set the filling aside.
  • Preheat the oven to 180°C (355°F).
  • Roll out one of the two puff pastry sheets and press it into your lightly oiled tart pan.
  • Top the dough with my filling.
  • Roll out the second puff pastry and cut out a scary or cute face of your choice. I made a big mouth, frowning eyes, and small nostrils.
  • Brush with a few drops of soy cream and bake for 40 minutes. It's ready!
