Apricot-Apple and Almond Crumble

In the category of grandma's desserts, I've concocted my awesome crumble for you. And not just any crumble: apricot, since it's in season, and with my very own crumble dough recipe (almond flour, vanilla, and orange blossom for added flavor).

I add apple mainly to soften the apricot, which often becomes acidic and harsh on my delicate taste buds when cooked! As a result, this recipe is (once again) adaptable to other fruits, depending on the season or your preferences (peach, rhubarb, cherry, pear...).

The applesauce
  • -sugar 10 (g)
  • -apples 3 (pcs)
  • -apricot 8 (pcs)
Crumble dough
  • -all-purpose flour 75 (g)
  • -light brown sugar 60 (g)
  • -almond powder 30 (g)
  • -plant-based margarine 50 (g)
  • -vanilla 1 (clove)
  • -orange blossom water 1 (tsp)

  • Preheat the oven to 180°C (355°F).
  • The applesauce: wash and peel 2 apples, then cut them into small pieces. Remove the pits from the apricots and cut them into pieces as well.
  • In a saucepan, pour 1cm of water at the bottom and add the chopped fruits along with the 10g of sugar. Cook until the fruits are stewed. Taste and add a bit of sugar if necessary!
  • Wash and peel the other apple and cut it into pieces. Set it aside to add raw to the crumble later.
  • For the crumble dough: mix the flour, brown sugar, and almond powder. Add the margarine and knead everything together until you have a smooth dough. Add the orange blossom and scrape the seeds from the vanilla pod to flavor your dough.
  • Mix the applesauce with the raw apple pieces. In your gratin dish, spread the applesauce and finish by crumbling the crumble dough to cover everything.
  • Bake for 30 minutes.
