Curry-style chicken seitan skewers

I had already made a seitan skewer recipe, but teriyaki style, two years ago on the blog! So this summer, now having a barbecue at home, I decided to make them again but with a seasoning. I chose to season it a bit like my chicken tofu but with some curry added in :)

Seitan takes more preparation than tofu and it needs to cook for a long time before it's ready, but it's a nice change and it's delicious 😋 You can also store it in the freezer for later before grilling on the barbecue!

For the seitan:
  • -salt 1 (tsp)
  • -dried Provence herbs 1 (tbsp)
  • -all-purpose flour 50 (g)
  • -gluten flour 140 (g)
  • -toasted sesame oil 1 (tbsp)
  • -balsamic vinegar 1 (tbsp)
  • -maple syrup 1 (tbsp)
  • -nutritional yeast 20 (g)
  • -curry 1 (tbsp)
  • -paprika 1 (tbsp)
For the marinade:
  • -olive oil
  • -curry
  • -flower of salt

  • Prepare the seitan: in a mixing bowl, combine all the ingredients with 150 mL of warm water.
  • Knead the seitan dough by hand for 5 minutes. Shape it into a log and cut slices about 0.5 cm thick.
  • Heat a large pot of water (or vegetable broth). When the water is simmering, cook the seitan slices in it for one hour.
  • Drain the slices and let them cool down.
  • Mix all the marinade ingredients together.
  • On skewers, pierce the seitan slices. You can alternate them with raw bell pepper pieces or cherry tomatoes.
  • Brush the skewers with the marinade.
  • Fire up your barbecue and grill your skewers on it!
