One-Pot Fried Rice with Tempeh

The ultimate quick meal: fried rice 🥹 You can toss in whatever you like—leftovers, and that’s it! If you already have cooked rice in the fridge, it’s even faster. Just skip the water in this recipe and add your cooked rice instead. But here, I wanted to show a one-pot version where the rice cooks along with the veggies and tempeh 😍

I’ve added a chickpea “omelet” to bring everything together. It really changes the texture, making the dish creamier and more indulgent. Totally optional though!

  • -toasted sesame oil 2 (tbsp)
  • -fresh ginger 1 (tbsp)
  • -basmati rice 130 (g)
  • -carrots 1
  • -Bok choy 3
  • -blanched or frozen peas 80 (g)
  • -tempeh 100 (g)
  • -water 500 (mL)
  • -Mirin 2 (tbsp) - optional
  • -soy sauce or tamari 2 (tbsp)
  • -hot sauceoptional
  • -lemonoptional

  • -chickpea flour 3 (tbsp) - optional
  • -water 65 (mL) - optional

  • Peel the carrot and slice it into rounds. Quarter the bok choy. Peel and chop the ginger. Dice the tempeh.
  • In a skillet or wok, heat the oil. Sauté the ginger, then add the rice and cook it for a few minutes until it becomes slightly translucent.
  • Add all the vegetables and the tempeh. Deglaze with the water and let it cook for about 15 minutes, stirring occasionally.
  • Mix the chickpea flour and water together.
  • When the rice is cooked, create a well in the center of the pan by pushing the ingredients to the sides. Pour the chickpea mixture into the center and let it cook for about two minutes while stirring. Then, mix it with the rest of the ingredients in the pan.
  • Pour in the mirin and soy sauce. You can also add some hot sauce and a squeeze of lemon juice! And it’s ready.
