It’s a huge classic of plant-based holiday cooking: the Vegan Seitan Wellington. Maybe you’re even tired of it by now 😅 But oddly enough, I had never shared one on my site before 🫣

So here’s my version: my recipe for a perfectly tender seitan roast, layered with a mushroom duxelles, wrapped in puff pastry. Served with a red wine sauce, mashed potatoes, and maple-roasted Brussels sprouts 😍
