Palak Paneer with Tofu

It was my first time making palak paneer, so I watched a million videos from Indian YouTubers showcasing the traditional recipe before coming up with my own version 😅 So, palak paneer is basically a cream of blended spinach mixed with onions, tomatoes, cumin, etc., and cottage cheese. For my version, I created tofu cubes in a halloumi cheese style (the Cypriot cheese that gets grilled). To do this, I brined the tofu and then grilled it with nutritional yeast (brewer's yeast).

This dish is served with rice!

The amount of tofu is roughly equivalent to half a block.

  • -tomatoes 1
  • -soy cream 125 (mL)
  • -nutritional yeast 10 (g)
  • -neutral oil 2 (tbsp)
  • -vinegar 2 (tbsp)
  • -firm tofu 225 (g)
  • -fresh spinach 100 (g)

  • Cut the tofu into cubes and marinate it with 2 tbsp of vinegar (cider or white), 1 tsp of salt, and 1/2 cup of water (125 mL). Let it marinate for 15 minutes.
  • Meanwhile, heat 1/2 cup of water in a saucepan. Add 2/3 of the spinach and cook for 4 minutes. Pour the contents of the saucepan into the blender and blend. Set aside.
  • In a saucepan, cook the rice in water.
  • Peel the garlic and onion, and dice them into small pieces. Dice the tomato into small pieces as well. Finely chop the garlic.
  • In a saucepan, heat 1 tbsp. of oil and sauté the onion. Add the spices and let sizzle. Add the tomatoes and the rest of the spinach. Cook for 6-7 minutes. Then pour the spinach liquid and the soy cream. Season with salt and pepper. Set aside.
  • Drain the tofu and mix it with the nutritional yeast.
  • In a frying pan, heat 1 tbsp of oil and cook the diced tofu for 6-7 minutes, turning the cubes occasionally. Mix the tofu with the spinach cream.
  • Drain the rice.
  • Serve the palak paneer with rice!
