Sweet and Sour Pineapple Tofu

Sweet and Sour Pineapple Tofu

This is one of my favorite dishes in Thai restaurants, so I wanted to make a really simple version for weekday evenings when we're feeling lazy but still want to eat well ;)

If you're feeling fancy, you can first make the tofu crispy by coating it in cornstarch and frying it in a pan with a little oil, before adding the sauce. But it takes more time and it's not essential!

For the sweet and sour sauce, we have a recipe here! It's super easy to make at home and it's cheaper than buying it :)

  • -firm tofu 450 (g)
  • -red onion 1
  • -bell pepper 3
  • -pineapple 200 (g)
  • -olive oil 2 (tbsp)
  • -salt

  • Peel the onion and cut it into fairly large wedges. Slice the bell peppers. Cut the pineapple into cubes.
  • Heat the olive oil in a frying pan and sauté the onion in it. Add the bell peppers and pineapple and let cook for about 25 minutes until they are soft and golden. Season with a little salt.
  • In the meantime, cut the tofu into cubes. Heat the sweet and sour sauce and 100 mL of water in a pan. Cook the tofu in it until it starts to change color and the liquid has evaporated. Add the tofu into the pan of vegetables.
  • Serve with rice and a little more sweet and sour sauce according to your taste ;)
