This is one of my favorite dishes in Thai restaurants, so I wanted to make a really simple version for weekday evenings when we're feeling lazy but still want to eat well ;)
If you're feeling fancy, you can first make the tofu crispy by coating it in cornstarch and frying it in a pan with a little oil, before adding the sauce. But it takes more time and it's not essential!
Peel the onion and cut it into fairly large wedges. Slice the bell peppers. Cut the pineapple into cubes.
Heat the olive oil in a frying pan and sauté the onion in it. Add the bell peppers and pineapple and let cook for about 25 minutes until they are soft and golden. Season with a little salt.
In the meantime, cut the tofu into cubes. Heat the sweet and sour sauce and 100 mL of water in a pan. Cook the tofu in it until it starts to change color and the liquid has evaporated. Add the tofu into the pan of vegetables.
Serve with rice and a little more sweet and sour sauce according to your taste ;)
