Another super simple one-pot meal ready in just 20 minutes 🥹🥹 I loved this sautéed tofu—perfectly caramelized—with cashews, broccoli, a touch of mild chili, served with rice. It’s easy, delicious, satisfying, and budget-friendly… just perfect for me 😅

  • -neutral oil 2 (tbsp)
  • -firm tofu 350 (g)
  • -cornstarch 1 (tbsp)
  • -sweet soy sauce 4 (tbsp)
  • -Whole roasted cashew nuts 30 (g)
  • -water 500 (mL)
  • -broccoli 1
  • -sweet pepper 1

  • In a pan, heat the neutral oil. Tear the tofu into small pieces directly into the pan. Sprinkle the cornstarch over the top and mix. Let it cook over high heat until all the tofu pieces are nicely golden and crispy.
  • Meanwhile, cut the broccoli into small florets and thinly slice the chili.
  • Once the tofu is golden on all sides, deglaze with sweet soy sauce (or teriyaki or hoisin sauce, for example). Mix well and add the cashews. Let the liquid evaporate over high heat, stirring occasionally.
  • Add the vegetables and pour in the water. Let cook over high heat for about 10 minutes until the water has fully evaporated and the vegetables are tender.
  • Serve over basmati rice or soba noodles, for example!
