This is a really easy and flavorful dish that you can prepare hours in advance, perfect for planning ahead and/or if you're new to cooking 😍 And the parsnip and roasted potato topping is wonderful!
Peel the parsnips and cut them into chunks. Cut the potatoes in half.
In a baking dish, arrange the vegetables with the plant-based butter, some rosemary, salt, and pepper. Bake for 45 minutes.
In the meantime, score the tofu by making incisions with the tip of a knife. Season the block with salt and pepper. Drizzle with olive oil and rub it all over. Add a spoonful of cornstarch and rub again around the block of tofu. Heat a pan and sear the scored side over high heat to get a crispy crust.
Prepare the sauce: mix the teriyaki sauce with a tablespoon of cornstarch, whisk. Add the maple syrup and the juice of one and a half oranges. Also, add the minced shallot.
Pour the sauce over the block of tofu in an oven-safe dish. Slice a few pieces from the remaining half of the orange and place them on top. Bake for 25 minutes. The sauce will thicken and glaze the tofu.
To serve, you can gather everything onto the same dish and pour the sauce over the top!
