  • Preheat the oven to 200°C (390°F).
  • Peel the parsnips and cut them into chunks. Cut the potatoes in half.
  • In a baking dish, arrange the vegetables with the plant-based butter, some rosemary, salt, and pepper. Bake for 45 minutes.
  • In the meantime, score the tofu by making incisions with the tip of a knife. Season the block with salt and pepper. Drizzle with olive oil and rub it all over. Add a spoonful of cornstarch and rub again around the block of tofu. Heat a pan and sear the scored side over high heat to get a crispy crust.
  • Prepare the sauce: mix the teriyaki sauce with a tablespoon of cornstarch, whisk. Add the maple syrup and the juice of one and a half oranges. Also, add the minced shallot.
  • Pour the sauce over the block of tofu in an oven-safe dish. Slice a few pieces from the remaining half of the orange and place them on top. Bake for 25 minutes. The sauce will thicken and glaze the tofu.
  • To serve, you can gather everything onto the same dish and pour the sauce over the top!
