Well hello there, folks! So, we'll stop pestering you about our cookbook story, it's over! And to order it, click here ;)

We've never released a seitan recipe on the blog (the only meat alternative was these nuggets here), so we decided to offer you a really simple version that you can use on your pizzas, in your sandwiches, as appetizers...

It wasn't intentional at first, but with all the ingredients we added, well, it resembles chorizo! Paprika, hot pepper, chili, marinated bell peppers... and you can also add liquid smoke :D

We know we'll get the question, so let's clarify: you can't make gluten-free seitan. If you're allergic to gluten, you can find recipes for other types of "mock meats" online. But the texture of seitan and all its nutritional benefits come from this protein.

  • -all-purpose flour 50 (g)
  • -tomato paste 4 (tbsp)
  • -maple syrup 1 (tbsp)
  • -soy sauce 2 (tbsp)
  • -mustard 1 (tbsp)
  • -vegetable broth 120 (mL)
  • -marinated peppers 2
  • -gluten flour 200 (g)
Spices and herbs
  • -cayenne pepper
  • -pepper
  • -thyme
  • -chili spices 1 (tsp)
  • -paprika 2 (tbsp)

  • Mix the gluten flour, flour, and all spices and herbs together.
  • Add the tomato paste, maple syrup, soy sauce, mustard, and hot vegetable broth (+ salt if it's unsalted). Also add the marinated bell peppers, cut into small pieces.
  • Mix the dough by hand until it's uniform, but don't knead it too much! The seitan could become rubbery after cooking if it's over-kneaded.
  • Heat a pot of water.
  • Shape the dough into a log (you can roll it in plastic wrap, cheesecloth, or nothing at all). Gently lower the log into a pot of water and let it simmer gently for 1 hour and 20 minutes on low heat. The water should not be boiling but merely simmering.
  • Remove from heat and let rest for an additional 15 minutes in the water.
  • Remove the seitan from the water and wait for it to cool down before slicing it!
