It was so good... I really recommend you try it, seriously 😍 Serve it with a comforting soup, for example, and it’s one of my favorite meals right now! Just requires a bit more patience because of the hour of rising time, but it's worth it 👌

Note: for the cheese, I used Daiya, the new recipe is great, it melts really well but I was informed that they run ads including meat in them 😳 they’re basically the pick-me of flexitarianism!

  • In a large mixing bowl, pour in the warm water. Add the maple syrup and the dry yeast. Stir and let it sit for 10 minutes. Foam should form on top, indicating that the yeast is active.
  • Add the flour, a drizzle of olive oil, and salt, and mix by hand to form a dough. It will look a bit rough for now. Let it rest for 10 minutes under a damp cloth (since it's winter, I place it in my switched-off oven with the light on).
  • Fold it over itself a few times to build strength (your hand should form a palm to avoid pressing your fingers into it at this stage, otherwise your fingers will stick to the dough).
  • Let it rest for one hour under a damp cloth (still in the turned-off oven).
  • Peel and slice the onions.
  • Cook them with a drizzle of oil in a saucepan over medium heat for about 20 minutes.
  • Midway through cooking, add the maple syrup to caramelize them. Then season with salt and pepper.
  • Meanwhile, the dough is ready to be poured into the oiled baking dish with the 4 tablespoons of olive oil. Fold it into thirds and turn it over to form a smooth square or rectangle. Let it rest for 10 minutes so it can expand and fill the dish completely.
  • Add a drizzle of oil on top and press your fingers into the dough to create some lovely air bubbles.
  • Spread the caramelized onions and sprinkle everything with shredded vegan cheese. Bake at 430°F (220°C) for 20 minutes on the lowest rack! And it's ready 😍
