I’m bringing back the pull-apart bread… I know! It’s the same recipe as my pull-apart garlic bread, but this time with caramelized onions and cheese! Put this on the table at a party, and it won’t last long 😍 I made this version to welcome some friends, and everyone loved it, so I recommend trying it this winter!

It’s a brioche bread recipe, with layers of caramelized onions and vegan cheese. You serve it by tearing off the pre-cut slices, and you can also pair it with a dip!

The dough
  • -all-purpose flour 500 (g)
  • -dehydrated baker's yeast 1 (tsp)
  • -water 60 (mL)
  • -salt 1 (tsp)
  • -neutral oil 2 (tsp)
The filling
  • -onion 2
  • -maple syrup 2 (tbsp)
  • -vegan grated cheese 60 (g)

  • Dissolve the yeast in the warm water.
  • In a mixing bowl or the bowl of your stand mixer, combine the flour and salt. Add the yeast and water, the plant-based milk, and the oil. Knead for a few minutes (using the dough hook if you have an electric mixer). The result should be a smooth, elastic dough that is not too sticky to the touch.
  • Cover with a damp cloth and let rise for 1.5 hours at room temperature (or in your turned-off oven with the light on).
  • Peel and thinly slice the onions. In a saucepan, heat a drizzle of oil. Sweat the onions over high heat.
  • Lower the heat and add a small amount of water. Continue cooking for about 20 minutes, then add the maple syrup. Cook for another 5 minutes until the onions are golden.
  • Season the onions with salt and mix with the grated vegan cheese.
  • Punch down the dough and divide it into 7 or 8 equal portions. Roll them out roughly into oval shapes. Spread each with the filling. Fold them in half. Place them vertically in your bread pan, tightly packed together.
  • Let it rest again for 30 minutes. Meanwhile, preheat the oven to 205°C (400°F).
  • Bake on the lower rack for 40 minutes.
