This recipe is so cozy and comforting πŸ₯° It's my carrot and ginger soup that I had shared in a story and which got way more positive feedback than I expected πŸ˜…

Due to this, I decided it deserved more than just a story! This soup is very creamy and mild in taste, super simple, and requires only a few ingredients. It's also perfect for soothing a sore throat or a little cold πŸ˜‰πŸ‚

  • -carrots 500 (g)
  • -onion 1
  • -fresh ginger 30 (g)
  • -olive oil 30 (mL)
  • -soy cream 250 (mL)
  • -salt
  • -pepper

  • Peel the onion, carrots, and ginger. Finely chop the onion, slice the carrots into rounds, and roughly chop the ginger.
  • In a saucepan, heat the olive oil. Sweat the onion in it, then add the ginger. Next, add the carrots. Let them sizzle over high heat so that the vegetables start to brown.
  • Then add about 1.5 L of water (or vegetable broth) and some salt, and let cook covered for 40 minutes.
  • Once the carrots are fully cooked, blend everything together! Add the soy cream and some pepper. Taste to adjust the seasoning and the amount of water according to the soup texture you prefer! It's ready β€οΈπŸ‚πŸ°
