Involtini are small stuffed rolls, and there are many types of them: meat, zucchini, eggplant... Here, they are zucchini rolls stuffed with soy ricotta and roasted bell pepper ๐Ÿ˜ Served on a tomato sauce (or marinara sauce!!!!), you can also add a dollop of pesto. I used the first zucchinis from my very first garden ๐Ÿฅฒ
