This spring, I've decided to grapple with asparagus! And this is the perfect recipe for that: a creamy asparagus soup, enjoyed hot or cold. I've added some grilled asparagus tips on top, little croutons, and a drizzle of olive oil for extra deliciousness. You can serve this creamy soup as a starter, hot or cold! Or even in mini glasses as an appetizer. And it can also be a main course with some toasts.

  • Snap off the ends of the asparagus stems, which can be a bit tough. Set aside about ten asparagus tips, which we will use at the end.
  • Peel and finely chop the onion.
  • In a saucepan, heat a tablespoon of olive oil. Cook the minced onion in it for a few minutes.
  • Add the asparagus, followed by a liter of water. Season with salt. Bring to a boil and let cook for 15 minutes.
  • In a frying pan, heat 1 tablespoon of olive oil and cook the asparagus tips set aside earlier. About 5-6 minutes.
  • Blend the soup with soy cream and pepper.
  • Serve the asparagus cream with a few grilled asparagus tips, some croutons, and a drizzle of olive oil.
