Well hello there! Let's not pretend we're on a summer diet, shall we... We love mayo and love handles around here, so there you go :D So for your quick summer meals, we recommend these cute little club sandwiches! With pan-grilled tofu, tomatoes, lettuce, mayo, and sliced vegan cheese.

Usually, we never use store-bought products like these in our recipes (and we don't buy them, mostly because they're sadly wrapped in plastic). But we thought it was interesting to add some for this recipe to be complete ;) Of course, you can choose not to use them.

And for the mayonnaise, you can make it at home (our recipe is here) or buy it directly!

for the tofu
  • -firm tofu 150 (g)
  • -soy sauce 3 (tbsp)
  • -neutral oil 2 (tbsp)
  • -maple syrup 1 (tbsp)

  • Prepare the tofu: cut it into thin slices. In a frying pan, mix the soy sauce, oil and maple syrup. Heat on high. When the mixture boils, add the tofu slices. Cook them for about 4 minutes on each side until they are nicely golden and the liquid has evaporated.
  • Toast your slices of bread.
  • Slice the tomatoes into rounds and roughly chop the lettuce.
  • To assemble your club sandwiches: alternate the slices of bread spread with mustard and vegan mayo, tomatoes, lettuce, sliced vegan cheese, and grilled tofu slices. Cut the sandwiches into 4.
