Vegan Burger with Pesto and Homemade Ketchup

Vegan Burger with Pesto and Homemade Ketchup
For: 4 serv.Difficulty: EasyPreparation: 30 minCooking: 20 min

Well, it must be said: we worship burgers at Éline's Table. But not the ones found in McDonald's and other indigestible joints.

Actually, contrary to popular belief, the hamburger does not come from the United States but from the city of Hamburg in Germany. In fact, hamburgers, in German, are Hamburger residents. But don't worry: we're not going to explain how to cook Hamburg residents but the famous burger.

Except that, unlike the original recipe, we will obviously not use meat for the steak but red beans and bell peppers instead. This will quickly make you forget the taste of a traditional burger!

  • For the steaks: Blend the red beans. Add the chopped red bell pepper and red onion, chili, salt, and pepper. Blend again. Transfer to a mixing bowl and add the flour and breadcrumbs. You can add more if the dough isn't thick enough to handle. With your hands, shape small steaks and bake for 8 minutes at 350°F. After baking, use a cookie cutter to shape the steaks (this step is optional, just for aesthetics :) ). Finally, pan-fry the steaks in a little olive oil.
  • For the pesto: Put the basil leaves, olive oil, pine nuts, and salt in a blender. Blend everything. And there you have it, your pesto is ready!
  • For the ketchup: In a saucepan, sauté the chopped onion and then add the tomatoes. Let it simmer for about twenty minutes. After that, put everything in the blender and add the vinegar, sugar, and salt.
  • Peel and thinly slice the red onion. Sauté it in a pan with a little olive oil until it becomes lightly golden.
  • Once you have the steaks, pesto, ketchup, and onion compote, put the muffins in a toaster (or in a pan, you know).
  • In the meantime, slice the tomatoes and avocado into thin strips.
  • Remove the muffins from the toaster and spread each inner side with pesto and a little bit of ketchup.
  • Add a bit of salad and place the steak on top.
  • Add ketchup onto the steak, onions, avocado slices, tomato slices, then again a bit of lettuce, and top it off with the muffin cap.
  • Enjoy your meal!
