Gua bao are those little steamed brioche sandwiches of Chinese origin. They're super tasty, melt in your mouth, and are way easier to eat than most sandwiches πŸ˜… Here, I wanted to highlight the plant-based fish alternatives made from konjac, created in Montreal by @woop4plantbased! I chose their tropical piranha which inspired this recipe 😍 I've also tried the smoked salmon and tuna tartare, both of which are fantastic. I enjoyed the tuna tartare in a poke bowl with wafu sauce, and I'm saving the smoked salmon to make a bagel πŸ₯°πŸ₯° The texture of konjac is excellent for replicating raw fish; it's tender, slightly "gelatinous," and I loved experiencing this texture again after 8 years without fish!

For the sauce:
For the gua bao
  • -all-purpose flour 250 (g)
  • -water 125 (mL)
  • -dehydrated baker's yeast 1 (tsp)
  • -sugar 1 (tsp)
  • -salt 1 (pinch)
  • -neutral oil 1 (tbsp)

  • Prepare the gua bao dough: in warm water, dissolve the yeast to rehydrate it. Add the sugar. Let it rest for about 10 minutes.
  • Mix the flour and salt, then pour in the lukewarm water. Stir into a dough to form a ball. Knead for a few minutes, then let the dough rest under a damp cloth for an hour.
  • Prepare the filling: mix the tropical piranha fish with lime juice, tamari, and chili to marinate.
  • Slice the carrots and avocado into strips.
  • Prepare the spicy mayo: mix the vegan mayo with sriracha, lime juice, and ground ginger.
  • Deflate the gua bao dough and divide it into 4 small balls. Roll them out to make 4 dough rounds about half a centimeter thick. Using a brush, oil one side of each dough round. Place a piece of parchment paper and fold the bao over themselves. Let them rest for another 20 minutes.
  • In the meantime, heat a pan of water. Place the gua bao in your steamer basket and set the basket over the pan of water for 14 minutes of cooking.
  • Fill the gua bao with mixed greens, carrot, avocado, spicy mayonnaise, and marinated tropical piranha fish! It’s ready!
