I have to tell you that as I write this article, I am devouring the very last bite of the apple-apricot crumble we made yesterday... In fact, the enormous baking dish for 6 or 8 people, we ate it all in one day with Kevin... We are unstoppable!

Anyway, after this "we-are-gluttons" side note, I present to you my super club sandwich filled with grilled zucchini, vegan spreadable cheese, barbecue sauce, and spinach. All the delicious stuff!

  • Wash the zucchini. Cut them in half and then into thin slices lengthwise.
  • In a pan, heat 1 tbsp. of olive oil. Cook the zucchini in it for about 4 minutes on each side, until they are tender and golden.
  • Deglaze with the tamari. Continue cooking for one minute, then remove from heat.
  • Toast the slices of bread.
  • Spread half of the slices of cheese with walnut. The other half with barbecue sauce.
  • On the side with the walnut cheese, place the slices of grilled zucchini. Add some spinach sprouts. Close the sandwiches with the bread spread with barbecue sauce.
  • Cut the sandwiches in half and serve.
