Oh boy, we're going all out here! If you're starting to get to know us a bit, you know we're not exactly on a diet... right? ;-) You're about to witness some serious competition: a vegan burger with creamy hummus, melted leeks, a butternut squash patty, and thin slices of carrots. Yes, we promise; we managed to fit all of that in there!

The galette
  • -butternut squash 0.5
  • -potatoes 3
  • -all-purpose flour 3 (tbsp)
The hummus
  • -cooked chickpeas 200 (g)
  • -tahini 1 (tbsp)
  • -lemon juice 1 (tbsp)
  • -soy cream 80 (mL)
Leek Fondue
  • -soy cream 100 (mL)
  • -leek 1
  • -carrots 1
  • -lamb's lettuce 1 (handful)
  • -olive oil
  • -salt
  • -pepper

  • For the patties: Peel and grate the butternut squash and potatoes. Drain well and season. Add the flour to form patties in your hands.
  • For the hummus: Blend all the ingredients and season.
  • For the leek fondue: Wash and slice the leek. In a pan, heat a little oil, add the leek and cook gently, covered, until soft. Add the cream at the end of cooking and season.
  • Toast the burger buns. Wash and peel the carrot. Cut into thin strips using a vegetable peeler.
  • Heat some olive oil in a pan. Brown the patties in it.
  • Place in your bread some hummus, a galette, melted leek, carrot, and lamb's lettuce.
