Today we have a sandwich recipe, which is quite rare on the blog 😅 But I love banh mi, especially with lots of sauce and jalapeño peppers! It's a Vietnamese sandwich on a baguette ✨

In this version, I've added mango for a sweet and fresh taste, and I used store-bought smoked tofu. It's super quick to make a sandwich on the go!

  • -fresh cilantro
  • -carrots 1
  • -cucumber 0.5
  • -apple cider vinegar 1 (tbsp)
  • -salt 1 (pinch)
  • -smoked tofu 200 (g)

  • Peel the carrot and mango. Using a vegetable peeler, create ribbons of cucumber and carrot. Allow them to marinate for about 10 minutes with the vinegar and salt.
  • Slice the mango, chili, and tofu.
  • Prepare the sauce: mix the mayonnaise and teriyaki sauce.
  • Cut the baguette into 4 sections, open them, and spread the sauce.
  • Topped with marinated vegetables, smoked tofu, mango, jalapeño, and cilantro! It's ready.
