I’m definitely making this all summer long — I LOVED it! I’d seen this idea floating around, but it was loaded with like 73,839 eggs, parmesan, smoked salmon, cream cheese… seriously, it was like the entire Noah’s Ark in there 🥲 So we needed a vegan version!

The idea is to grate a bunch of veggies and bind them (here I used chickpea flour instead of eggs — I love using that flour, it’s tasty, cheap, nutritious, and high in protein…), spread the mix in a thin layer on a baking sheet, bake it, and use it as a wrap. I filled mine with cashew cheese and arugula, but you could totally go for smoked tofu, sun-dried tomatoes, cucumber… It’s a simple summer meal, great warm or cold with a side salad! Also perfect for an appetizer or a potluck.
