  • -onion 3
  • -sugar 1 (tsp)
  • -soy milk 250 (mL)
  • -tapioca starch 40 (g)
  • -agar-agar 0.5 (tsp)
  • -nutritional yeast 10 (g)
  • -jalapeno pepper 1
  • -olive oil 2 (tbsp)
  • -salt
  • -pepper

  • Peel the onions and thinly slice them.
  • In a saucepan, heat 1 tablespoon of oil and sweat the onions.
  • When they start to brown, reduce the heat to medium. Continue cooking for about fifteen minutes, stirring occasionally.
  • In the meantime: in your blender, mix the milk, starch, agar-agar, a tablespoon of oil, salt, and nutritional yeast.
  • When the onions are tender and golden, add the sugar and let them caramelize for a few more minutes. Season and set aside.
  • Peel the onions and thinly slice them. Thinly slice the jalapeño.
  • In a small saucepan, heat the milk-based mixture while whisking. It will become very thick and stringy like melted cheese! Set aside.
  • Heat a skillet and place a wheat tortilla in it to warm up! Top one side with onions, melted cheese, and jalapeño, then fold the other side over to close. Grill for another minute on each side, then remove from heat.
  • Repeat this process for the other two wheat tortillas. Cut each tortilla in half to have 6 quesadillas! Enjoy 😍😍
