Alright, let's go for another round with our burgers, after the pesto-ketchup, the butternut and hummus, and the coral lentils; now, here comes the Mexican! You'll be able to indulge in guacamole, bell pepper, red beans, tortilla chips... yeah, it's a cliché, but we promise, we know Mexico is not all about that ;-)!

  • Prepare the red bean steaks: Peel an onion and chop it finely. Slice the basil. In your blender, blend the red beans with the tomato paste. Transfer to a mixing bowl and add the onion and basil, along with some salt and pepper. Finish by adding the breadcrumbs to achieve a slightly compact mixture. Shape the steaks with your little hands or using a cookie cutter!
  • Prepare the guacamole: chop the tomatoes into small cubes. Mash the avocado flesh with a fork. Add the tomatoes, spices, juice from half a lemon, and season with salt and pepper.
  • Prepare the raw vegetables: peel the second onion and slice it into rings. Cut the bell pepper into thin strips.
  • Assemble the burgers: toast the buns. In a pan, heat a little oil to cook the red bean patties for 4 to 5 minutes on each side. In your burger buns, spread some guacamole, put a patty, onion rings, pepper strips, and tortilla chips. Yummm, now you can enjoy!
