When we lived in Lyon between 2014 and 2017, there weren't many vegan options for eating out! Among the few scattered options, there was this bagel at Best Bagel, with delicious fake chicken (the first one I ever ate) and barbecue sauce. Honestly, it hit the spot! The other day, I had a craving for it, so I made my tofu-chicken that I always make, but this time I pan-fried it—it's quicker than baking. And I whipped up my quick barbecue sauce using store-bought ketchup!

  • -toasted sesame oil 2 (tbsp)
  • -soy sauce 3 (tbsp)
  • -maple syrup 2 (tbsp)
  • -nutritional yeast 10 (g)
  • -balsamic vinegar 1 (tbsp)
barbecue sauce
  • -ketchup 125 (mL)
  • -mustard 1 (tbsp)
  • -soy sauce 1 (tbsp)
  • -liquid smoke 0.5 (tsp)
  • -bagel bread 4
  • -tomatoes 1
  • -arugula 40 (g)

  • Cut the tofu into slices and tear them into pieces.
  • In a bowl, mix them with toasted sesame oil, soy sauce, maple syrup, balsamic vinegar, and nutritional yeast.
  • Heat a skillet and grill the tofu-chicken pieces for about 6-8 minutes until they're nicely browned.
  • Prepare the barbecue sauce: mix all the ingredients.
  • Toast the bagels cut in half.
  • Cut the tomato into slices.
  • Top the bagels with barbecue sauce, tomato, arugula, and tofu-chicken!
