Once upon a time, what made my blog famous was all my vegan burger recipes 😅 I felt like I had covered everything after about ten recipes on here and in my book, but now here's a new one that I've absolutely loved! Tartar sauce, roasted bell peppers, and red bean patties. Served with smashed baked potatoes!
In a pot filled with water, place the whole, washed potatoes to cook for 40 minutes with coarse salt.
Prepare the candied bell peppers: wash the bell peppers. Roughly chop them. In a saucepan, heat 1 tbsp of oil, then grill the bell peppers for about 10 minutes. When they are nicely grilled, add 1/2 cup of water (125 ml), 1 tbsp of sugar and a pinch of salt. Continue to cook on low heat for 20 minutes to candy the bell peppers.
Peel and chop the shallot.
Prepare the steaks: In a bowl, mash the red beans to make a paste. Add the soy protein, tomato paste, 1/4 cup of hot water, paprika, half of the chopped shallot, and salt. Form 2 patties.
Prepare the tartar sauce: mix the mayonnaise with the other half of the chopped shallot and the finely chopped herbs.
On a baking sheet covered with parchment paper, place the cooked potatoes. Using the bottom of a glass, flatten them into patties. Add margarine, salt, and pepper on each, then bake for 10 minutes at 180°C (350°F).
In the meantime, in a frying pan, heat 1 tbsp of oil and then cook the red bean patties for a few minutes on each side.
Toast the burger buns.
Assemble: on each side of the burger buns, spread some tartar sauce, add a bean patty, some candied peppers and lettuce or arugula, and close the burgers. Serve with baked potatoes!
