Oven-baked Toast with Caramelized Onions

You know when you don't have much time to cook, and you've got some old leftovers in the fridge but not much to make a meal... it happens to me quite often ;) So in those moments, I usually make some toast that I eat with a soup or some lettuce! And my favorites are some good walnut bread with vegan cheese grilled on top and caramelized onions! It's so yummy!

Then I add whatever I have on hand, this time it was some sprouts, a bit of plain soy yogurt, pepper, and chopped green onions :)

  • -large onion 2
  • -sugar 3 (tbsp)
  • -salt
  • -pepper
  • -olive oil 2 (tbsp)
  • -country bread 4 (slices)
  • -vegan cheese slices 4 (slices)
  • -green onions 0.5 (bunch)
  • -pea shoots

  • Prepare the caramelized onions: peel the onions and slice them thinly.
  • In a saucepan, heat the oil and sweat the onions in it. When they start to brown, deglaze with 200 mL of water. Let simmer over medium heat until the onions are tender.
  • Once they are nicely soft and the water has evaporated, add the sugar. Let it caramelize so the onions take on a beautiful golden color. Season with salt and pepper.
  • Get those toasts ready! On your slices of bread, place some vegan cheddar and a generous layer of caramelized onions. Put the toasts in the oven on grill (or broil) mode so that the cheese melts.
  • Finish the toasts with a spoonful of yogurt on top, some pea shoots, and thinly sliced green onions!
