  • In a saucepan, heat the sugar and water together on high. Let it boil for a few minutes, then turn off the heat and pour into a glass jar. The syrup can be stored in the fridge for several months.

NotesFor flavoring: add citrus peels, ginger, edible flowers, fresh herbs, fruit peels, vanilla pods... right at the start of the cooking process. At the end of cooking, strain the mixture to keep just the syrup. If you want a more intense flavor, you can let these ingredients infuse for 15, 30, 45... minutes after cooking while the syrup is still hot, then strain.
