Make the Earl Grey concentrate. Bring the water to a boil, remove from heat, and add the tea to the water. Cover and let it steep for 15 minutes. Strain and let it cool.
Place ice cubes in 4 cocktail glasses to chill them.
In a shaker, add ice cubes. Pour in the amaretto, Earl Grey concentrate, cranberry syrup, and chickpea juice. Shake for about 30 seconds to create a nice foam.
Remove the ice cubes from the glasses, which should be well-chilled, and pour the mixture from the shaker, straining out most of the ice cubes.
Pour each glass, pour sparkling water to top off and finish your cocktails!
