Only 2 days left until Christmas Eve, and if you still don't know what to make for dessert, we've got a last-minute recipe for you. It's quite simple: vanilla ice cream with a caramel center, all coated in shredded coconut!

You can even prepare this dessert in advance to have one less thing to worry about on the big day ;-)!

For the vanilla ice cream, you have three options:

 

  1. Buy vegan vanilla ice cream, such as from Carrefour where you can find the brands Morane and Amy’s Kitchen
  2. Freeze soy vanilla dessert cream for 3 hours, stirring occasionally
  3. Make a vegan custard with soy milk, vanilla, sugar, and cornstarch, and freeze this mixture in the same way

  • -soy cream 250 (g)
  • -grated coconut 100 (g)

  • Take the ice cream out of the freezer to let it soften a bit.
  • In a saucepan, pour in the sugar and heat without stirring. It will gradually transform into caramel. You can move the saucepan to help all the sugar melt, but do not stir with a utensil, as this would cause the caramel to clump.
  • During this time, gently heat the cream over low heat. When the caramel is nicely golden and there is no more undissolved sugar left, pour in the cream in two parts and stir the pan well.
  • If needed, continue to heat so that the caramel melts well into the cream and you obtain a smooth, uniform mixture.
  • In 6 silicone half-sphere molds, distribute the vanilla ice cream. Create a small hole in each half-sphere and pour in some caramel. Let it set in the freezer for 1 hour.
  • Unmold the half-spheres and heat the flat part with a blowtorch to stick them together and obtain 3 balls.
  • Gently heat the outside with a blowtorch and roll them in shredded coconut.
