Peel the potatoes. Cut long and thin fries. Soak them in a large bowl filled with water and ice for 30 minutes to remove excess starch.
Meanwhile, peel and finely chop the onion. In a skillet, heat a tablespoon of oil and sauté the onion. Add the plant-based mince and cook until everything is nicely browned.
Meanwhile, heat the remaining oil in a saucepan (or a deep fryer).
Drain the fries and dry them well with a clean cloth. The drier they are, the crispier they'll be!
When the oil is nice and hot (after 4-5 minutes), drop the fries in and cook for about 15 minutes, keeping an eye on them and stirring occasionally.
Prepare the sauce: mix the soy cream with the vinegar (or lemon juice) to thicken it. Add some salt and the harissa paste. Stir well.
Drain the fries fresh out of the oil on a rack for just a few seconds. Then toss them in a bowl with a good pinch of salt to season.
Serve the fries in a deep plate, add a drizzle of sauce, the plant-based mince, another drizzle of sauce, some cilantro, and sliced small chilies! Serve hot with the remaining sauce on the side 😍
