  • Peel the potatoes. Cut long and thin fries. Soak them in a large bowl filled with water and ice for 30 minutes to remove excess starch.
  • Meanwhile, peel and finely chop the onion. In a skillet, heat a tablespoon of oil and sauté the onion. Add the plant-based mince and cook until everything is nicely browned.
  • Meanwhile, heat the remaining oil in a saucepan (or a deep fryer).
  • Drain the fries and dry them well with a clean cloth. The drier they are, the crispier they'll be!
  • When the oil is nice and hot (after 4-5 minutes), drop the fries in and cook for about 15 minutes, keeping an eye on them and stirring occasionally.
  • Prepare the sauce: mix the soy cream with the vinegar (or lemon juice) to thicken it. Add some salt and the harissa paste. Stir well.
  • Drain the fries fresh out of the oil on a rack for just a few seconds. Then toss them in a bowl with a good pinch of salt to season.
  • Serve the fries in a deep plate, add a drizzle of sauce, the plant-based mince, another drizzle of sauce, some cilantro, and sliced small chilies! Serve hot with the remaining sauce on the side 😍
