Potato and zucchini pancakes

Potato and zucchini pancakes
For: 2 serv.Difficulty: EasyPreparation: 20 minCooking: 15 min

You don't really know what to munch on for dinner and you don't feel like rackin' your brains? We're going to give you a super simple recipe that, to say the least, is not very demanding: potato and zucchini pancakes (or grated).

In Russ, in the Alsace region, potato pancakes are called totsche. And there's even a totsche festival! Well, yeah, it's perfect for a friendly meal!

We often have the habit of adding eggs to potato pancakes. Except that the traditional recipe doesn't contain any! So, that's great because we weren't planning on adding any :-) .

  • Start by grating the zucchini (without the fingers).
  • Place your grated zucchini in a colander, add some salt, and let it drain for at least 30 minutes (or 1 hour if you're not in a hurry).
  • Next, peel the potatoes and grate them in turn.
  • Put everything in a mixing bowl and add the olive oil, flour, salt, and pepper. Mix it all together.
  • Heat some oil in a frying pan.
  • Grab a handful of the mixture and form a patty. Let it cook on both sides.
  • Place your galettes on a plate alongside a paper towel to absorb the frying oil.
  • Enjoy your meal!

NotesYou can serve these pancakes with a nice salad and you'll have enough to satisfy the whole crew!
