Quick and Creamy Tahini Udon Noodles with Broccoli

Quick and Creamy Tahini Udon Noodles with Broccoli
For: 2 serv.Difficulty: EasyPreparation: 15 minCooking: 20 min

It's the very end of bell pepper season in Quebec, so I'm taking full advantage, but this recipe works great without them too!

The sauce is super creamy and indulgent thanks to the tahini, and you know my love for teriyaki sauce 😍

  • Separate the broccoli florets. Cook them in salted boiling water for 15 to 20 minutes, depending on your preference (I like them tender, so I go for 20 minutes).
  • 3 minutes before the end of cooking, add the udon noodles.
  • Slice the bell peppers and green onions.
  • In a pan, heat the sesame oil. Sauté the bell pepper and green onions for about 10 minutes.
  • In a bowl, mix the tahini, teriyaki sauce, and 125 mL of broccoli cooking water.
  • Drain the broccoli and noodles. Combine everything in the pan with the bell peppers and pour over the sauce. Serve with a few slices of hot peppers if you like it spicy 😍
