I've already shared several noodle recipes based on this principle: you heat water for the noodles and in the meantime, you prepare a sauce, it's ready in 10 minutes, it's convenient for lunchtime and it's so delicious! So here comes another version: peanut butter and buffalo sauce, I LOVE IT, it's totally my taste 😍😍 I've added some edamame into the noodle water to sneak in some more legumes πŸ˜….

  • -rice noodles 80 (g)
  • -peanut butter 2 (tbsp)
  • -sweet soy sauce 2 (tbsp)
  • -buffalo sauce 1 (tbsp)
  • -edamame 60 (g)
  • -green onions 1

  • Put a pot of salted water on to heat for the noodles.
  • In the deep plate you'll be eating from, mix the peanut butter, soy sauce, and buffalo sauce.
  • In the pot of water, immerse the edamame and noodles for 5 minutes of cooking.
  • Scoop out 1/4 cup (65 mL) of the cooking water and pour it into your bowl to thin out the sauce a bit.
  • Drain the noodles and edamame and add them to the bowl. Mix with the sauce and finish off with a finely chopped green onion. It's ready!
