This kind of dessert is a bit of our guilty pleasure, you see... a shortbread or a Breton cookie, a cream or mousse, fresh fruits, and that's it! Everyone thinks you're a great pastry chef when you barely broke a sweat ;-) But keep it quiet... that stays between us!

We can make really tasty and much more impressive things than the old apple pie that takes a thousand years to make and dirties your entire kitchen. Don't get us wrong, we have nothing against your apple pie... ;-)

But, as a friend's advice: less is more! So for a super quick vegan tartlet, you'll only need a base of crushed cookies, vanilla cream, and red fruits. You don't even need a piping bag for a successful presentation; we spread the cream the old-fashioned way, with a spoon ;-) .

Important note: we used petit brun cookies, which contain palm oil. So if you don't eat it, feel free to choose the ones you prefer!

  • -soy milk 175 (mL)
  • -sugar 70 (g)
  • -cornstarch 30 (g)
  • -vanilla 1 (clove)
  • -plant-based margarine 60 (g)
  • -soy cream 50 (mL)
  • -raspberries
  • -blueberries

  • Prepare the vanilla cream: bring the soy milk to a boil with the vanilla bean split in half. In a mixing bowl, combine the sugar and cornstarch. Pour the boiling milk over it and whisk. Make sure to get all the vanilla seeds from the bean and remove it from the mixture. Place back in the saucepan over medium heat and whisk until the cream thickens significantly.
  • Transfer to a mixer and let the whisk run until the cream cools down. Add the soy cream to loosen everything up. Finish by adding small pieces of margarine to "whip up" your vanilla cream.
  • Preheat the oven to 375°F.
  • Prepare the biscuit base: Crush the biscuits with a mortar or the bottom of a glass bottle, for example. Don't turn the biscuits into dust, though ;) there should still be some chunks left!
  • With your little hands, mix in the margarine. When it's smooth, divide into 4 circles of 8 cm and bake for 10 minutes. Remove from the oven and let cool. Spread some cream on each tart base then arrange the red fruits. And yum yum, enjoy ;)
