At the moment, I'm loving making taquitos! It's my current super simple and quick craving 😍 You can put a little bit of whatever you want inside, but here it's a filling inspired by refried beans: spicy black beans grilled in oil and slightly mashed. I add spinach sprouts and vegan cheese.
For serving, I add sour cream, hot sauce, and a little homemade green sauce!
In a frying pan, heat 1 tablespoon of neutral oil. Sauté the onion in it.
When it's melting, add the black beans, some salt, and the spices. Cook for a few minutes and then roughly crush the beans. Remove from heat.
In each taco shell, place 3 teaspoons of this filling, a few spinach leaves, and some grated cheese. Roll the taquitos.
In a frying pan, heat 1 tablespoon of neutral oil. Sear the taquitos on each side.
Prepare the green sauce: blend half of the soy cream with the spinach and a few drops of lemon juice, season with salt.
Prepare the sour cream: pour the juice of half a lemon over the remainder of the soy cream. Wait a few seconds for the cream to curdle and mix, you'll see that the cream suddenly becomes thick!
Serve the taquitos hot with the sauces!
NotesI use taco-sized wheat tortillas (6-7 inches in diameter) and canned black beans.
