Here's a little recipe for a super easy, super fresh cake for your lovely summer evenings ;) With a bit of whipped cream and fruit, it's light and delicious!

  • -all-purpose flour 440 (g)
  • -sugar 220 (g)
  • -salt 1 (tsp)
  • -baking powder 1 (tsp)
  • -almond powder 50 (g)
  • -apple cider vinegar 60 (mL)
  • -neutral oil 80 (mL)
  • -vanilla extract 1 (tbsp)

  • Preheat the oven to 355°F (180°C).
  • Whisk together the flour, sugar, salt, baking powder, and almond powder.
  • Separately, mix the plant-based milk, vinegar, vanilla extract, and oil. Pour this mixture over the first one and whisk to achieve a smooth batter.
  • Pour the batter into a lightly greased cake pan (about 18 cm in diameter).
  • Bake for 40 minutes. Turn off the oven and leave the cake inside, door closed, for an additional 10 minutes to properly finish cooking.
  • Allow the cake to cool completely, then remove it from the mold.
  • Garnish with whipped cream and all the sliced fruits!

Notesfor the plant-based whipped cream, you can make one of my whipped cream recipes or princess cream, or just whip some coconut cream and add icing sugar. Otherwise, you can also buy pre-made vegan whipped cream at the store! You can soak the cake with a syrup if you want it to be even more moist like a sponge cake! Or leave it as is if you prefer more of a cake texture.
