Some simple little stir-fried noodles with veggies and a peanut butter satay sauce, it's so easy, but so delicious, isn't that what we want for our weeknight dinners right? 😍😍
Peel the carrots and slice them into thin strips. Peel the onions and cut them into quarters. Slice the bell peppers.
Peel the garlic cloves and finely chop them.
In a frying pan, heat 2 tbsp of neutral oil. Sauté the garlic on high heat, then add the carrots, onions, and bell peppers. Sauté the vegetables for 10 minutes, then add 250 mL (1 cup) of water and continue cooking for a few more minutes.
In the meantime: bring a pot of water to a boil. Cook the ramen noodles in it for 4 minutes. Drain them.
Prepare the satay sauce: mix all the ingredients together.
Add the noodles to the pan and sauté for 3-4 minutes. Deglaze with the satay sauce. Serve with a wedge of lime and thinly sliced green onion.
