Stuffed Peppers with Shredded Tofu

I showed you my way of making grated tofu in January for tacos, stuffings, shepherd's pies, etc., but I hadn't shared a recipe with it yet!

So here are some stuffed peppers ♥️♥️

  • -bell pepper 2
  • -onion 1
  • -firm tofu 225 (g)
  • -blanched or frozen peas 100 (g)
  • -soy sauce 2 (tbsp)
  • -smoked paprika 1 (tbsp)
  • -Ras el-hanout 1 (tsp)
  • -flat-leaf parsley 1 (branches)
  • -soy cream 80 (mL)
  • -vegan grated cheese 40 (g)
  • -olive oil 2 (tbsp)
  • -maple syrup 1 (tbsp)
  • -salt
  • -pepper

  • Cut the bell peppers in half and remove the seeds inside.
  • Peel and thinly slice the onion. In a skillet, heat the olive oil and sweat the onion.
  • When it starts to brown, add the maple syrup to caramelize it for about 10 minutes. Season with salt and pepper.
  • Grate the tofu and season it with spices, chopped parsley, and soy sauce. Add it to the pan with the caramelized onions. Also, add the peas.
  • Let it grill over the flame for a few more minutes.
  • Stuff the peppers with this mixture. Add soy cream on top and vegan grated cheese. Bake for 30 minutes at 355°F (180°C). It's ready!
