Oh la la, the tofu topic is quite sensitive! Rumor has it that it has no taste, that soy makes men's breasts grow, that it's too expensive, and that vegans eat it all the time... What's the deal with that? :D
Well, let's clear things up... you are not at all obliged to eat tofu to be vegan. It's an option that exists, but you know, just because you're omnivorous doesn't mean you have to eat pig liver (actually, that option shouldn't even exist, but that's another story, huh). Anyway, what I'm trying to say is, it's okay if you don't like it.
But if you like it or if you want to give it a try, here are our tips: tofu should be purchased in the refrigerated section (forget about the gross bjorg stuff you find at Leclerc, just toss it out). It's a relatively affordable ingredient, but since it's processed, it's inevitably more expensive than raw legumes. There are several types of tofu classified by texture: silken, firm, extra-firm... Firm or extra-firm will work for this recipe. However, silken tofu is really something else, it's more like a slightly set cream. You can also find flavored, smoked, and seasoned tofu, so you can have fun trying those too!
For this recipe, you'll just need plain tofu that we'll cook with maple syrup, soy sauce, a bit of oil, and ketchup. Ketchup is optional, and you can actually add anything you'd like to the preparation - such as spices, toasted sesame seeds, fresh ginger, garlic... By the way, you can also cut your tofu into bacon-like strips!
