Surprise Bread with Onions, Tomatoes, and Basil

That day was one of those days when I really didn't know what to eat! You know, one of those days when you have stuff in your fridge but nothing that can go together to make a proper meal... So, I took out my box of flour and some vegetables and voila! A little surprise bread! The slow-cooked onions like this are my guilty pleasure, and with cherry tomatoes, it's the best!

I recommend it as an appetizer, sliced or as open-faced sandwiches with tapenade, for example.

  • -onion 1
  • -dehydrated baker's yeast 1 (sachet)
  • -water 100 (mL)
  • -salt 8 (g)
  • -all-purpose flour 300 (g)
  • -basil
  • -cherry tomatoes 10

  • Preheat the oven to 131°F.
  • In a mixing bowl, combine the flour, yeast, and salt. Add the olive oil and a little water.
  • Mix everything together and gradually add a tiny bit of water until you can form a nice ball. Knead the dough a little with your hands and reshape it into a ball.
  • Place the dough ball in the oven for 20 minutes to let it puff up.
  • Meanwhile, peel the onion and wash the tomatoes.
  • Slice the onion into fairly thin half rings and cut the cherry tomatoes in half.
  • Remove the dough from the oven and knead it lightly. Spread it out a bit with your palms and top with onions and tomatoes.
  • Fold the dough over itself and fill it again.
  • Fold everything one last time to properly encase the filling and arrange basil leaves on top.
  • Bake the bread for 30 minutes at 180°C (356°F) and it's ready!
