This is a very old recipe for me, but I hadn’t wrote it yet, so here it is, my classic muffins!

My favorite topping is the big chocolate chip granolove from @pranafoods.ca—so good. It’s 100% plant-based, organic, a source of fiber, and made with simple ingredients like Canadian oats 🌼

  • -banana 2
  • -soy milk 250 (mL)
  • -neutral oil 2 (tbsp)
  • -apple cider vinegar 2 (tbsp)
  • -maple syrup 65 (mL)
  • -baking soda 1 (tsp)
  • -baking powder 1 (tsp)
  • -all-purpose flour 225 (g)
  • -dark chocolate 50 (g)
  • -granola 50 (g)

  • Preheat the oven to 350°F (180°C).
  • Mash a banana with a fork in a mixing bowl.​
  • Pour over the milk, oil, vinegar, and maple syrup. Whisk together. Add the baking soda and baking powder, and whisk again. Finally, add the flour and whisk briefly.​
  • Chop the other banana into small pieces and add it, along with the chocolate, to the muffin batter.
  • In your greased muffin molds (or lined with paper liners), pour the batter. Top each muffin with granola and bake for 40 minutes!
