And there you have it, we're diving into the gluten-free and all... like we're eating healthy, like we're not, you know, chubby... But don't worry, we've put some good oil, good sugar, and good chocolate in there because let's not mess around either, right! 

Actually, we bought some rice flour to do some testing and we liked it, that's all! But I also have to admit that there were some little mishaps because of this &$#!?* flour, so I confess that for a pastry chef, gluten is life... (I love you, gluglu, I was lost without you <3 ). But we know what it's like to feel restricted in your diet when you can't find the right recipes or ideas (#veganfeels), so we're also thinking of you, little gluten-allergic or intolerant friend, and we love you too! 

Even though there are already quite a few recipes like this on the worldwideweb, we wanted to share this one with you, which is still pretty simple. So go ahead, enjoy!

  • -rice flour 150 (g)
  • -sugar 45 (g)
  • -cornstarch 20 (g)
  • -grated coconut 20 (g)
  • -dark chocolate 210 (g)
  • -coconut oil 65 (g)
  • -soy milk 100 (mL)

  • Melt the chocolate with the coconut oil, using a double boiler or in the microwave.
  • Preheat the oven to 175°C (350°F).
  • In a mixing bowl, combine the yogurt and soy milk. Add the melted chocolate, followed by the flour, cornstarch, grated coconut, and sugar. Mix well to achieve a smooth batter.
  • Pour the mixture into greased muffin tins and bake for 15 to 20 minutes (the soft cakes should still be slightly soft when you take them out of the oven, they will firm up as they cool).
  • Let them cool for an hour before devouring ;) If you eat them later, you can warm them up a bit!
