Carrot Cake Vegan Cookies

It’s been a year and a half that ‘stuffed cookies’ have been on my list of recipe ideas, but I didn’t know with what to stuff them… 😅 Of course, at home, you can use the same recipe to fill them with chocolate spread, for example. But I wanted to suggest something more original! I felt like creating cookies inspired by carrot cake 😍 I love carrot cake, but it takes a bit longer to make, and it always ends up being a huge amount of cake, haha. These cookies taste exactly like carrot cake, it’s crazy, and they’re filled with carrot cake frosting! For that, I used vegan yogurt, but it could also be made with vegan cream cheese!
