I made these cookies at my brother-in-law’s request after an afternoon of sledding, and they were incredible 😅 So I had to make them again to film and write down the recipe this time!

 


Enjoy them while you can because I might be cutting out (or at least drastically reducing) sugar from my diet in the coming months. And since I eat all the recipes I create… well, naturally, my content will adapt too.

The reason is that I’m trying to shift toward an anti-inflammatory diet, which has been recommended in my case to help with intestinal pain I experience during PMS (with a possible endometriosis diagnosis). But just to be clear—I’m still deeply against diet culture! There’s absolutely nothing wrong with enjoying good homemade cookies for most people 🥰

  • -sugar 175 (g)
  • -plant-based margarine 210 (g)
  • -baking soda 0.5 (tsp)
  • -all-purpose flour 300 (g)
  • -peanuts 90 (g)
  • -dark chocolate 90 (g)
  • -peanut butter 3 (tbsp)
  • -flower of salt 1 (pinch)

  • Preheat the oven to 180°C (355°F).
  • Mix the margarine and sugar together until you get a creamy texture. Add the plant-based milk and baking soda. Mix well. Add the flour and sea salt, then mix again until a dough forms.
  • Then fold in the chocolate chips, peanuts, and peanut butter. Mix well.
  • Using an ice cream scoop, form dough balls and place them on a baking sheet lined with parchment paper. Bake for about 22 minutes.
