These are the best cookies in the world! They're so quick to make that I whip them up all the time for an afternoon snack, especially after a walk—perfect timing 😍. They keep really well for 4 days in an airtight metal box.
Cream together the margarine and sugar until you achieve a smooth texture.
Add the soy milk, baking soda, and cocoa powder. Mix. Add the flour and mix again until you get a batter.
Add the marshmallows and chocolate, and fold them in by hand.
Using an ice cream scoop, form balls and place them on a baking sheet lined with parchment paper. You can add more marshmallows and chocolate on top. Sprinkle with sea salt flakes.
Bake for 20 minutes at 355°F (180°C). Let it cool for a few minutes before eating!
